Prudence’s Blueberry Pie
Crust: 2/3 cup plus 2 TBLS shortening
2 cups all purpose flour
1 teaspoon salt
4 to 5 TBLS cold water
Filling: ½ cup of sugar
1/3 cup of all purpose flour
½ teaspoon of ground cinnamon
4 cups fresh blueberries
1 TBLS of lemon juice
2 TBLS of butter
Heat oven to 425. Prepare crust and filling and bake 35 to 45 minutes until crust is golden brown and juice begins to bubble through slits in crust.
